potato & beet roast

this is surprisingly good--and not much work.

buy 3-5 beets, and about the same quantity by weight of potatoes.
scrub.
dice in 1 cc cubes.
dump onto a baking sheet.
sprinkle with olive oil, salt, and pepper.
mix/toss a bit.
bake at 350 for about 30-40 minutes. use a fork to judge when done.
