summer vegetable pie
the inspiration for this pie was one made for me by iva, a czech friend i met in graduate school. like many of my favorite recipes, it has many incarnations--but it's astonishingly tasty. it's good hot, but we took it on a picnic lunch to central park and it was delicious cold.
crust: in a deep pie pan, combine
oil
salt
flour
filling:
layer sliced tomatoes and zucchini in the pie pan.
between layers, sprinkle grated parmigiano cheese, oregano, salt, thyme, or whatever else you feel like.
whisk some eggs and flour together in a bowl. add some minced garlic or garlic salt. pour the liquid over the filling.
top with tomato slices, more oregano, and grated cheese.
bake for almost an hour.
